Why this bottle matters
Kei Shiogai owns no vines. He buys grapes, which in Burgundy still carries a faint stigma among growers — and then makes roughly ten thousand bottles a year split across sixteen separate cuvées, which works out at a few barrels of each. Le Poisot is one of them. What made his name was not marketing, of which he has done almost none, but a quiet chain of professional attention: Charles Bufane, who runs the restaurant Le Soufflot in Meursault, tasted Shiogai's very first Pommard, bought it for the list, and began opening it when other professionals asked what was worth tasting.
Cellaring perspective
Whole-cluster fermentation, indigenous yeasts and sulphur kept to a minimum or omitted; low yields bought from growers who farm the way he wants. His cellar sits in an industrial park on the edge of Beaune, which is roughly the opposite of a château. Pommard is the Côte de Beaune's most structured red commune, and made with this much whole bunch it needs time before it opens.
