Why this bottle matters
Vin de France is not an appellation at all. It is what a wine is called when it claims no protected origin: no village name, no cru, no hierarchy doing part of the work — and therefore nothing to hide behind. Kei Shiogai came to wine as a sommelier in Tokyo, flew to France in 2013 to learn how it was made, and now produces around ten thousand bottles a year across sixteen cuvées, buying fruit from growers rather than owning land.
Cellaring perspective
The method does not change with the label: whole clusters, indigenous yeasts, minimal or no added sulphur, and yields kept low by the people he buys from. Scarcity here is not a marketing position but arithmetic — sixteen cuvées out of ten thousand bottles leaves very little of anything. A wine to open rather than to accumulate.
