Kei Shiogai left Tokyo for Burgundy in 2013 and learned his trade in the cellars of Philippe Pacalet, Armand Rousseau and Jean-Marc Roulot before beginning his own micro-négoce. He buys fruit from growers he trusts, ferments whole-cluster with almost no sulphur, and works in a small cellar outside Beaune. There are no public photographs of his face. Volumes are minute, allocations fought over, and Greg Sherwood MW has called him a superstar in the making — a cult built in barely five vintages.
Cellaring perspective
Gevrey-Chambertin gives the frame; Shiogai's touch gives the lift. These are wines of delicacy rather than weight, and they reward a decade or more in a cool cellar. Scarcity is the defining fact: contracts with growers are year to year, and no vintage is guaranteed to repeat.
