Guix is Catalan for gypsum, and this is Huber's oxidative white — old-vine Pedro Ximénez on the white clays of Lloar, Garnatxa Blanca on slate and Macabeu on river stones across Torroja and Poboleda, raised apart for a year in 500-litre wood, then married in foudre until bottling in mid-2016. Gutiérrez called the 2014 spectacular: tremendously mineral, austere, straight and vertical, even less oxidative than usual, as if ageing at a slower pace — and recorded Huber's own conviction that this is the longest-lived wine of the house. Here it rests in double magnum.
