Vilmart was founded in Rilly-la-Montagne in 1890 by Désiré Vilmart and has been a récoltant-manipulant from the start, making Champagne only from its own vines. Laurent Champs, the fifth generation, took over in 1989 and has used neither herbicides nor chemical fertilisers since. Two things set the house apart: everything ferments and ages in oak rather than steel, and malolactic fermentation is blocked entirely, which preserves the acidity that wood would otherwise soften. Tom Stevenson called Vilmart the greatest grower Champagne I know.
Cellaring perspective
Eleven hectares in twelve unusually large parcels across Rilly-la-Montagne and neighbouring Villers-Allerand, planted to roughly sixty per cent Chardonnay — an unusual balance for the Montagne de Reims. Non-vintage cuvées are vinified in large oak vats and rest three to four years in the chalk cellars; vintage wines go into small Burgundy barrels and are held longer. A Champagne built on wood and full acidity rather than dosage tends to hold rather than fade.
