Why this bottle matters
Émotion is Vilmart's vintage rosé, bottled only in years the house declares — the cuvée formerly labelled Grand Cellier Rubis, renamed from the 2012 release. It is a rosé de saignée: colour drawn from brief skin contact with Pinot Noir rather than by blending in red wine, which gives structure instead of tint. Sixty-year-old vines in Premier Cru Rilly-la-Montagne, ten months in oak before bottling, five years on lees, and no malolactic fermentation.
Cellaring perspective
Vilmart has been a récoltant-manipulant since 1890, working eleven hectares in twelve parcels; Laurent Champs, the fifth generation, took over in 1989 and has used no herbicides or chemical fertilisers since. Vintage cuvées are vinified in small Burgundy barrels rather than the large vats used for the non-vintage wines. A decade after the harvest, a saignée rosé with blocked malolactic and this much lees ageing is a wine for the table rather than the aperitif.
