Why this bottle matters
Les Beaudiers is pure Meunier from three plots at Chavot planted in 1953, 1958 and 1965 — a variety that spent decades being treated as filler for blends, here given a single-vineyard bottling of its own. It is a rosé de saignée: the colour comes from twelve to fourteen hours of maceration on the skins, not from adding red wine, which is the harder and rarer way to make a pink Champagne.
Cellaring perspective
Fermented with natural yeasts in barrel with no malolactic, from an estate that works nine hectares in around seventy parcels and farms biodynamically or in conversion. Saignée rosé carries more structure and less prettiness than the blended kind; from vines of this age it is a wine for the table. Aurélien Laherte is the seventh generation of the family at Chavot.
