Why this bottle matters
The name means unexpected, and it is a note the house made to itself: the Chardonnay parcels selected at Ludes and Rilly-la-Montagne turned out to age far better than anyone had assumed they would. Ludes is Meunier and Pinot Noir country — more Meunier than its neighbours on the same slope — so a serious Blanc de Blancs from there is not what the village is for. François and Pierre Huré, the third generation, bottled it anyway.
Cellaring perspective
Matured four to five years in the cellars before release, a large share of the base fermented in wood, disgorged Extra Brut like everything else the house makes. Ten hectares farmed as around forty parcels, vinified separately, on spontaneous yeasts. A Chardonnay from a village that is not supposed to produce one, kept back until it was ready: both of those are arguments for waiting rather than opening early.
