Étienne Calsac is a young grower in Avize, in the heart of the Côte des Blancs, working a handful of small parcels by hand. Les Revenants — the returned, the revenants — takes its name from vines brought back from abandonment. The wines are Chardonnay of low dosage and high tension, made in tiny quantity, and have made him one of the most closely watched names among Champagne's new generation of vignerons.

In magnum, Champagne ages more slowly and more evenly than in bottle: the smaller ratio of oxygen to wine preserves freshness for longer. A format for the long view, and for the table that deserves it.
