Vincent Dancer, an engineer by training, founded this domaine in 1996 on family vines and made it one of Burgundy's early organic-certified estates — barely five hectares from Chassagne to Meursault, Pommard and Beaune, with a cult following built on taut, saline, minimal-intervention whites. His son Théo, fully in charge since 2021, has gone further: new oak has been banished from the cellar entirely, and the village Chassagne ferments naturally, without bâtonnage, in used barrels. The 2023s were bottled under Diam closures as construction of a new winery began — a quiet estate that keeps refining.
Cellaring perspective
2023 was a generous vintage for white Burgundy, and this is a fleshier, more open expression of the domaine's style, so the window arrives earlier than in leaner years. Dancer whites are nonetheless built on tension and depend on correct storage above all; drink from around four years, and expect a decade of evolution in bottle.
