Les Clos is the greatest of Chablis's seven grands crus — the largest and, by common consent, the most complete — and William Fèvre holds the single biggest share of it. The estate's style has shifted decisively toward transparency in the past two decades: less new oak, more Kimmeridgian stone, more of the oyster-shell salinity that makes Chablis what it is. Les Clos is where that austerity turns into grandeur.
