Déhu Père et Fils was founded at Fossoy in 1787, two years before the Revolution, and Benoît Déhu is its eighth generation. After a spell at Bollinger he came back with one question: how good can Meunier be if someone takes it seriously? In 2011 he took 1.7 hectares of the family's vines — a parcel called La Rue des Noyers, named for the walnut trees that once bordered it — and began bottling it alone, under his own name. Single vineyard, single year, single variety, all of it Meunier.
Cellaring perspective
The vines date from the early 1970s, on clay, limestone and marl shot through with flint, planted at eight thousand to the hectare; a quarter of the parcel is ploughed by a horse called Violette. Fermentation and ageing happen in oak barrels, many of them made from trees in the forest at Fossoy, with no malolactic, no fining and no filtration. Déhu has since begun vinifying the parcel's three rootstocks as separate cuvées — the same ground, read three ways. In magnum, a wine already built for the long term slows down further.
