Why most of it is never listed
A collection is not an inventory. The difference is what you are willing not to sell. Some bottles are kept because keeping them is the point — presence, not stock.
There is a kind of cellar that exists to be liquidated, slowly, at the right moment. This is not that. The bottles that never appear here are not hidden for effect; they are simply not for sale. A private cellar earns its quiet by being under no obligation to part with anything. What is released is released because it makes sense — never because the month needs it to.
